The following method is the simplest and quickest way to crystallize flowers. Whole small blooms or single petals may be used, the most suitable being Violets, Borage flowers, English primroses, Rosemary flowers, Rose petals, and small whole rosebuds. The various scented mint leaves are excellent too.

Put the white of an egg into a saucer, break it up with a fork, but do not whip. Take a dry flower or a single petal, and with a small paint brush dipped into the egg white, cover it completely, then shake caster sugar through a fine sieve over the flower, first on one side then the other. as they are finished, spread them out on greaseproof paper laid in a small oven dish. Put the flowers in a very slow oven with the door open for approximately 10 - 15 minutes, gently turning them as the sugar hardens. Do not leave too long or they will go brown. Store the candied flowers between layers of greaseproof paper in an airtight box.
